Happy leap day! Tis that extra lucky day (or believed to be extra unlucky by some) that comes every four years to keep us in sync with the solar / seasonal year. It actually takes the Earth 365 days, 5 hours, 48 minutes and 46 seconds to complete its orbit (around 365.25 days), so an extra day is added to the calendar to keep us in tune with that additional time.

And who doesn’t appreciate additional time? No matter what your superstitions about today may be, an extra day on the calendar gives us all a little bit more life to live! And with spring just around the corner, what better time to be inspired by the beauty of the Earth. It is a beautiful Saturday afternoon here in Atlanta. The sun is shining, the sky is clear, and rumor has it the temperature is going to reach 64 degrees today. What a delightful surprise for the last weekend in January, especially since there was snow on the ground only a week ago.

Time to take advantage of this fortuitous break from the cold and head outside!  And a day like today is perfect for a trip to Arabia Mountain. About 25 minutes outside of downtown Atlanta, this rock mountain’s unique topography hosts beautiful plant life, water formations, and landscapes that make you feel like you’re on another planet. This little piece of outer space has both bike and hiking trails, perfect for a full day of outdoor fun (and dogs are welcome, too!).

Cardamom is a spice that comes from the seed pods of various ginger plants. Native to India and popular throughout Asia, Cardamom is the world’s third most expensive spice, famous for its aromatic and healing properties. It commonly used in food, medicine, and skincare.

Cooking with Cardamom

There are two main types of cardamom: green and black. Green, also called true cardamom, comes from an aromatic perennial herb plant. It is widely used in Indian cuisine, and is a popular spice used in baking sweets as well as flavoring coffee and tea. Black Cardamom has more of a smoky flavor, commonly used in meat dishes and soups. Both are found in popular sweet and savory dishes such as curry pastes and masalas.

Is it just me or do we all hesitate to immediately embrace what our Mother says? My mother kept telling me about an article I had to read. Finally last night I read the crumpled newspaper article that she had gifted me and voila! It was an article by Susan Salisbury of the Palm Beach Post.  An informative short read, please click on her name to read the entire article. In it she states” “Natural” holds no regulatory definition. And just because something isn’t man-made doesn’t necessarily mean it is safe (consider poison ivy, poisonous mushrooms, or hemlock”. Which I hope illustrates the benefit of buying USDA organic certified that is regulated by USDA and the State Department of Agriculture. I won’t get on my band wagon of the arduous, costly, time consuming annual event that being certified requires. Rather, I will state that we are proud of our status. So, why is the camellia on this post? Is it natural that my camellia is blooming today the weekend of Labor Day alongside my sunflowers, phlox and ginger lily?  Which brings me to my point, I hope, that natural is not defined and regulated, however organic is.
