Tarragon is my new herb du jour, it is sublime. Sautéed in butter with garlic and scallions it is a nice savory addition to pork and purple potatoes. Tarragon has a wonderful anise flavor when cooked but loses this flavor once it is dried. Originally from Asia it was known as dragon root due to the intricate root system. It was thought to cure snake bikes.  It is known to increase the appetite and to stop the hiccups. Next time you are at a market buy a fresh bunch.
